This course will provide students with a thorough understanding of concept of food frauds and vulnerability assessment for food fraud and enable them to use techniques to better monitor and identify and mitigate risks associated to raw materials in the supply chain.
This course is particularly useful when implementing product safety management systems and the requirements of the GFSI.
Students will also learn how to conduct a documented food/edible fraud vulnerability assessment (FFVA) and develop mitigation strategies to protect against food fraud.
